Bruschetta Recipe: When You’ve Got Guests, But Don’t Got The Time

I absolutely love hosting brunches, luncheons, dinners and anything where friends and family come together with some good food and drinks. While before my daughter I had plenty of time to prep and cook, these days I’m more limited with a 2.5 year old. So, I’ve retired some of my favorite old recipes and replaced them with new super quick and easy ones – this bruschetta recipe is one of them.  It takes me about 15 minutes to make and is a hit every single time. Check it out and let me know how it turns out and if you have any suggestions of your own.

 


What you’ll need for this Bruschetta Recipe:

 

1 French baguette (fresh or toasted for some added crunch)

4 medium sized super red and ripe tomatoes, chopped

6 oz whole milk fresh mozzarella, chopped

1 cup chopped basil

5 cloves garlic, minced (note: I like a lot of garlic flavor, if you’re not a fan use 3 cloves instead)

1 tablespoon fine olive oil

Salt and pepper to taste

Whole fresh basil leaves for garnish (optional)

Makes about 20 bruschetta toasts

Step 1: Prepare Your Toasts

  • Cut the baguette into half-inch slices, discard the ends
  • If you want to add a little crunch, toast them until they are golden (make sure not to burn or let them get charred)

 Step 2: Prepare Your Tomato Mixture

  • Chop the tomatoes, you can chop them as small or as big as you’d like but I tend to chop as shown in the picture so that they are a good size for bites
  • Chop the buffallo mozarella, make the pieces the same size as your tomatoes
  • Finely chop the basil leaves
  • Mince the garlic
  • Put above ingredients in a medium sized mixing bowl, add the fine olive oil and toss well
  • Add salt and pepper to desired taste

 Step 3: Assemble!

  • Set the individual baguette pieces on a serving plate and spoon enough tomato mixture to cover each
  • If you want to go all out, finish by garnishing each toast with a fresh basil leaf

Sidenote: When my guests are on a diet or more health-conscious, I ditch the buffalo mozzarella from my bruschetta recipe; if you do this just add 2 more tomatoes to make the same amount.
